Udon Noodles with Typical Asian Sauce

You can only shop these products at Asian supermarkets and these should not be on the shelf.
Check out the freezer.
The traditional udon noodles are only made with wheat, starch and salt.
That is why they should be in the freezer .
( Available at most go Asia stores. )


Ingredients for 1 main dish serving.
15g oil of your choice
25g tofu
Total 7g aromatic vegetables
(Garlic, ginger coriander root etc)
1 small chili (optional)
10g soy sauce (light)
25g mushrooms sauce
5g sugar
1tbsp brewer's yeast
5 crack of black pepper
1 cup of sliced veggies
(Green onion , carrot ,sprouts, red bell pepper, cherry tomatoes etc)
1/4 cup starchy water from boiling noodles
(Topping)
A hand full of fresh coriander leaves
10g roasted almonds
For boiling noodles
1000ml boiling water
1 block of frozen Udon noodles
Preparation
Boil a pod of water(1000L) for the noodles.
You don't have to add any salt.
Step 1 (Topping)
Roast almond until golden. Set aside.

Step 2
Warm about 1tbsp of oil on the frying pan.
Fry sliced tofu for a couple of minutes over a medium heat.
If you want to reduce the amount of fat use only a drizzle of oil.

Step 3
Add finely chopped aromatic vegetables such as garlic, ginger and coriander root.
Optionally add a chili, too ( You could remove the chili later if you don't eat that ).
Let it sizzle for a few minutes over a low heat.
Just before adding fresh vegetables add black pepper.
Turn off the heat as soon as the chopped garlic is golden.

Step 4
Add all the sauce and condiments.
Let it cook for 30 seconds over a high heat.

Step 5
Add a cup of thinly sliced fresh vegetables.
Let it cook for 2 minutes over a high heat.
Scoop 1/4 cup of boiling water from the noodles pot and add in the frying pan.

Step 6
Boil frozen udon noodles until they loose the block shape just for 1-2 minutes.
The frozen Udon noodles are already boiled before being packed ,so they are not raw. No worries.

Step 7
Transfer the boiled noodles into the frying pan. (Don't rinse the noodles)

Step 8
Stir fry everything quickly over a high heat.

Step 9
The stir-fried udon is done.
Garnish it with some herbs and roasted almonds :)
