My Bruschetta 2024.AUG

As you know me, i don't prepare food roughly.

I care about small details, grams and the temperature.

It's not as simple as how it looks but I share an experience that is worth your time.

Usually I make this garlic oil one day before the day i serve my bruschetta.


4 cloves of garlic (Not sliced)




Add all the ingredients in a Cocotte.

Heat it in a not preheated oven for 20minutes (and let it in the oven for 5minutes)

at 250℃

The oven is the oven is not hot to start out so it only slowly cooks.

The garlic cloves remain white to creamy, but the aroma transfers well to the oil.

It can be used immediately or cooled and refrigerated.



Ingredients for the toppings for 12 small pieces


250g ripe cherry tomatoes (red and yellow)

1tbsp salted capper (chopped )

1tbsp pickled olives (chopped)

1tbsp red onion (finely chopped)

1tbsp basil leaves (finely chopped)

1tbsp garlic oil (made above)

A pinch of sea salt (6 cracks)

A pinch of black pepper (6 cracks)


Ingredients to make a garlic toast

1/2 Baguette

20ml garlic oil (made above)


STEP 1

Prepare all the condiments and herbs.


STEP 2

Chop tomato into into small pieces.

You can't just cut them in half.

Use a sharp knife not to lose a lot of juice.


STEP 3

Add everything in a bowl except for the salt.

(Add salt just before you serve this topping on the toasted bread)

Mix well with a spoon.




Set aside while we prepare the baguette.



STEP 5

Slice baguette into 12 small pieces.



Usually, the bread is sliced diagonally to increase the surface area,

But this bruschetta is a finger food at an event, so I slice it into small, thin pieces.


STEP 6

Brush one side of the baguette with garlic oil.

Make sure that the slices are placed in the same direction.

This will affect the final appearance.


STEP 7

Toast just the oiled side on a frying pan.

To achieve nice golden color, start with a cold pan and toast for 7-8 minutes.

While you are toasting baguette slices add salt in the tomato toppings.

So it starts to release the juice. (we use the juice in the step9)




STEP 8

When nicely toasted, place the golden side up,

Arrange them slightly diagonally.

The top surface is coated with oil to prevent it from being soggy.

Once this condition is achieved, the toppings can be placed.



STEP 9

Top with a generous amount of toppings just before you serve them:)
