Do you want some Last-minute finger food recipes you can easily throw together?
I have something for you.
If you have one big English cucumber it's usually about 300g each.
This recipe requires just about 1/2 English cucumber.
Ingredients for this Tzatziki
Shredded cucumber 150g
1tsp salt (5g )for massaging shredded cucumber
125 g soy yogurt
25g tahini
10g olive oil
10g lemon or lime juice
2g Greek spice mix (including salt)
2g lemon or lime zest
Black pepper to taste
STEP 1
Massage shredded cucumber with salt.
Set aside while you prepare other ingredients.
Squeeze out the water from the cucumber after 5 minutes
It seems like a lot of salt but after discarding salty water it will be balanced. (Don't rinse the cucumber.)
STEP 2
After draining water the cucumber should reduce the volume a lot.
In a serving bowl , add 125g of soy yogurt and 25g of tahini first.
If you don't have any Greek seasoning, you can substitute it with some fresh garlic, dill, basil or Italian herb mix.Add some salt and pepper to taste.
Mix everything in a bowl except for the topping black pepper and lemon zest.
STEP 3
Finally sprinkle some salt and lemon zest.
Tzatziki is done.
Serve it with crackers.

Ingredients for 9 pieces.
150g spelt flour (Type 630 )or wheat flour (405)
30g olive oil
20g chopped olives
2g salt
5g ground flaxseed
65ml water
Bake at 220 for 10mins
STEP 1
Preheat oven for 220℃
Mix salt and flour first.
STEP 2
Add olives and ground flaxseeds in the mixture.
Toss the olives well in flour to make them easier to form dough in the next steps.
STEP 3
Pour in oil and water all in once.
Mix the dough with a spatula.
STEP 4
Once the dough is combined into one ball, divide it into three equal portions.
STEP 5
Just use your" wet hands" to spread the dough into a flat long shape on a silicon mat. As long as your hands are wet nothing sticks to your hands.
STEP 6
Bake it at 220℃ for 10 minutes.
STEP 7
After 10 minutes of baking they are still kind of soft but you can already slice them into smaller pieces.
If you wait too long they get too crispy and become more fragile.
