Zucchini Rolls (GF Option )


These are my usual rolled zucchini made with my soy frikadelle.

I sprinkle brewer's yeast or nutritional yeast on top.


But i made a gluten free filling to share with a customer.

They are almost the same taste but the shape has been changed so that it can be easily distinguished from the non gluten free dish.




And this is the gluten free recipe:)


For the filling

200g extra firm tofu

30ml water

10g olive oil


2tbsp PAN corn flour

1- 2 tsp vegan broth powder (depends on the salt level)

1tbsp chia seed

1tbsp vegan cheese or almond powder (optional)

100g aromatic vegetables (90g onion, green onion/20g garlic)


75g (dried) alnatura's soy schnitzel

Some water to boil soy schnitzel

Pepper and salt to taste


Other ingredients

Zucchini slices from half to one zucchini.

30ml olive oil for frying patties.

Some extra oil for applying with a brush.

325ml tomato sauce (Alnatura Toscana tomato sauce/or home made)

Basil leaves (optional topping)


Preparation

Boil soy schnitzel for a couple of minutes.

Strain water very well. Set aside.


Preparation of the tofu.

If you don't have an Asian soft tofu.

You need to make a paste with tofu 200g tofu,30g water and 10g olive oil.

Just blend everything.



STEP 1

Mix all the vegetables and dried ingredients.



STEP 2

Add strained soy schnitzel and pureed tofu.

(Add salt and pepper to taste.)




STEP 3

Form small balls with using an ice cream disher.

The filling is enough for 14-15 balls.



STEP 4

Press it tightly with a wet hand.

Fry them until golden.

I used about 2tbsp oil here.


If you want to make it oil fee you can also bake it in the oven.



STEP 5

Wrap each one of the patties with a thin slice of zucchini.

Pour tomato sauce into a baking dish.

Brush the surface of the zucchini with oil.

Sprinkle some spices, vegan cheese, or nutritional yeast optionally.


STEP 6

Bake it for 20minutes at 200℃

These are baked with brewer's yeast on top. ( Not a gluten free ones)

Serve it with fresh basil leaves:)
