Zucchini Rolls (GF)

I usually make such a casserole dish with my soy frikadelle.
But this time made gluten free filling in response to your request.



(Ingredients for 1 casserole dish with 12-15 patties)
For the filling
200g extra firm tofu
30ml water
10g olive oil
2tbsp PAN corn flour (if you are not GF use wheat flour)
2 tsp vegan broth powder (depends on the salt level)
1tsp Herb Butter Spice( this includes salt also)
1tbsp chia seed ( or flax seed to bind)
1tbsp vegan cheese or almond pulp (optional)
100g aromatic vegetables (90g onion & green onion/10g garlic)
75g (dried) alnatura's soy schnitzel
Some water to boil soy schnitzel
Other ingredients
Zucchini slices from half to one zucchini.
30ml heat stable oil for frying patties.
Some extra oil for applying with a brush.
400g tomato or paprika sauce (store bought /or home made)
Basil leaves (optional topping)
Pepper and salt to taste
Preparation
Boil alnatura's fine soy schnitzel for a couple of minutes.
Strain water very well. Set aside.

Preparation of the tofu.
If you don't have an Asian soft tofu.
You need to make a paste with tofu 200g tofu,30g water and 10g olive oil.
Just blend everything.


STEP 1
Mix all the vegetables and dried ingredients.
In the picture i have only 1tsp of vegan broth powder.
But I end up to add 2 tsp.

STEP 2
Add strained soy schnitzel and pureed tofu.
(Add salt and pepper to taste.)


STEP 3
Form small balls with using an ice cream disher.
It becomes roughly 13-15 pieces.

STEP 4
Press it tightly with a wet hand.
Fry them until golden.
I used about 2tbsp oil here.
Pro-Tip
If you are not in hurry, wrap each one of ball with a plastic foil or baking sheet.
Let it sit in the fridge for 30minutes. So the balls get really firm to keep the nice shape.


STEP 5
Wrap each one of fried patties with a thin slice of zucchini.
Place tomato sauce into a baking dish.
Brush the surface of the zucchini with oil.
Sprinkle some spices, vegan cheese, or nutritional yeast optionally.



STEP 6
Bake it for 20minutes at 200℃


STEP 7
It's done!
Serve it with fresh basil leaves.

If you want to make the casserole dish looks vibrant, only place basil leaves when the surface is not steaming hot. Otherwise the leaves will turn brown quickly.
How not to waste zucchini and oil?
If you want to wrap patties in this form check out this method.
Just requires double amount of zucchini slices.
If you have got one HUGE zucchini, it's going to be enough.
(Also you if you want to reduce oil consumption, just wrap patties without frying)
