Adaptable Tomato Sauce

I make this fresh tomato sauce whenever i have a lot of tomatoes home.
I combined 3 different tomatoes this time but You can make this even with only cherry tomatoes.
If you have black cherry tomatoes , it works also fantastic and they are really sweet.
Anyway fresh tomato sauce is a lot milder than canned tomatoes.
This is very adaptable dish that i sometimes use for making
Minestrone
Shakshuka
Pizza & Pasta
Casserole dishes
Tacos
Curry
Stew
Just by adding something else.

Ingredients for about 400g of tomato sauce
400g fresh tomatoes mixed.
100g chopped onion
1tbsp EV olive oil
1tsp salt
1/2 tsp cumin and chili flakes (or spices of your choice)
A pinch of sugar (Optional)
10g tomato paste (Optional)
STEP1
Warm oil in a frying pan.
Sautee chopped onions and salt until the onions become translucent.
After that add spices.


STEP2
If you are adding tomato paste , add it before fresh tomatoes go in.
Because it's more flavorful when it's sauteed.
Then add all the chopped tomatoes.
Sautee for about 5-10 minutes over a medium heat until well combined.
Place a lid and let it cook over a medium heat for another 10minutes.

STEP3
It's ready when it looks like " tomato sauce" .
If you want to fix the acid level add a pinch of sugar.
If you want to make it more intensive add some more tomato paste.
I like to keep it rather runny because it firms up a bit in the fridge.

Here is the examples of using this sauce.
Mixed with short pasta, and freshly chopped herbs.
