Carrot Orange Salad

If you are looking for a quick recipe this carrot salad is Not a good match.

This salad is a bit time consuming one.

It tastes better the next day.

I recommend making it one night before your planned meal.


Ingredients for 650ml size meal prep box


1/2 Valencia orange and it's juice

250g sliced carrot (peeled)

5g salt (to process the carrot slices )

25g olive oil

7g Valencia orange zest from 1/2 orange

1tsp dijon mustard

A pinch of black pepper

1/2 tsp chopped cumin seeds

Fresh herbs of your choice


How to make this salad

Slice carrots nice and evenly with utmost care.





Sprinkle salt over the sliced carrots.(Let it sit for at least 15minutes)



Drain salty water very well without braking the carrots.

(You need to wait long enough, so prepare oranges while you wait for the carrots)

Just use the orange peel not the white part of the orange.





Marinate the carrot with the rest of the ingredients.




Store in the fridge overnight.


(Next day )

Serve the salad with parsley.
