Okonomiyaki (Japanese cabbage pancake)

For 2 pancakes


300g finely chopped cabbage

50g chopped green onion

50g Oyster mushroom

125g spelt flour (Type 630)

30g rice flour (not sticky rice )

1/2 tsp black salt

1tsp smoked paprika powder

1tbsp chia or flax seed

10g baking powder

1tbsp freshly chopped ginger

1tbsp brewer's yeast


+1cup water

+1tbsp oil for one pancake each

(I used 2tbsp olive oil in total )


(sauce)

2tbsp tomato paste

30ml water

1tbsp soy sauce

1/2 tbsp dark say sauce

1/2 tbsp vegan Worcestershire sauce

1/2 tbsp raw cane sugar
