Okonomiyaki (Japanese cabbage pancake)

This recipe is made for an event :)
I finally found this Otafuku Vegan Okonomiyaki Sauce at one of Go Asia shops.

Okonomiyaki
Ingredients for 1 big pancake or 3 mini pancakes
(Fresh ingredients)
150g finely chopped cabbage (savoy cabbage)
25g chopped green onion
1tsp freshly chopped ginger
(Dry ingredients)
60g spelt flour (Type 630)
15g rice flour (or chickpea flour )
1tbsp brewer's yeast
1/4 salt
1/2 tsp smoked paprika powder
1tsp chia or flax seed
1tsp or 3g baking powder
1/2 cup or 125ml soy milk (I use alpro barista )
+15ml oil for one side of the pancake
+10ml oil for another side of the pancake
A brush of roasted sesame oil ( optional)
(Sauce)
About 1tbsp for one serving
(Topping )
1tbsp green onions or coriander
A pinch of chili flake
About 1tsp tahini
Step 1
Mix all the dry ingredients in a bowl.

Step 2
Finely chop all the fresh ingredients.

Step 3
Combine the dry ingredients and the vegetables.
Never add any liquid in this stage...!


Step 4
Finally pour in soy milk. Mix it roughly.
For this recipe using " soy milk" is the key.
It adds some protein in this dish and make the dough firm and crispy when it's fried.Because soy milk curdles when it's heated .


Step 5
Warm about a table spoon of oil in the frying pan.
Be generous about this oil but you can reduce the oil amount of the other side.

Step 6
Add all the dough if you would like one big okonomiyaki.
Fry it for 3-4 minutes over a medium heat until one side is golden.
(with out lid )

Step 7
Don't flip it yet. Transfer the pancake to a dish.
Drizzle some oil on the frying pan.(about 5 to 10g)

Step 8
Fry the other side for about 3-4 minutes.

Step 9
After frying the 2nd side of the pancake for 3-4 minutes.
Flip it to check both sides are golden.

Step 10
If you want to drizzle a small amount of roasted sesame oil.
You could.

Step 11
Serve it on a dish with the crispy side up.
Brush about 1tbsp of sauce.
Garnish it with chopped herbs, chili flake and tahini sauce.
