Redcurrant Jelly



👉The sugar:berrris =1:2 ratio

is important to make the jam firm.

Currants by nature have the perfect combination of pectin and acidity,

so a good Jam will be made without any additional pectin.


Ingredients

400g redcurrant berries

200g raw cane sugar (sugar)

75ml water


STEP1

Wash berries under clean water.

Remove the fine stems.


STEP 2

Add all the ingredients in a pot.

Let it simmer for 5minutes.







STEP 3

Keep simmering for 15 more minutes

Remove as many seeds as possible during this time.

I used a tea strainer.


STEP 4

The Jam looks still very runny in the pot but don't worry.

It will be firm up in the jar once it's cooled.

I left the Jarred Jam in the room temperature for 1H, then kept it in the fridge for 1H. And it's done:)
