Rolled Sushi 20.01.2024


Thank you for joining today's event:)

I am glad that everyone made it so beautifully !

In the workshop we prepared bigger portion but this is the ingredients for

at least 3 sushi rolls (about 24 pieces ) 👇



Rice

300g short grain white rice (rinsed)

360ml water in case you use a pressure cooker

(=600ml water in case you cook rice with a normal pot )

A strip of Kombu kelp (optional)



Sushi vinegar

Rice vinegar 40ml

Sugar 20g

Salt 1/2tsp


Filling of your choice

Boiled carrot sticks

Boiled bok choy

Yellow bell pepper (grilled or raw)

Avocado/cucumber

Beets (jarred)

Fried oyster mushroom

(150g oyster mushroom/cornstarch//20ml olive oil/10ml soy sauce/pepper)


How to pressure cook this sushi rice.(IP)

Add a piece of kelp in the instant pot with rinsed rice and water.

Start cooking in rice cooking mode.



When the rice is done cooking, release the steam ,remove the kelp.

Then mix in the sushi vinegar.


(Sushi vinegar is the mixture of rice vinegar, sugar and salt)

Be careful not to mash the rice.

Allow it to cool down to room temperature.


How to fry oyster mushroom.


Sprinkle cornstarch all over the mushrooms.

Heat some olive oil on a frying pan ,and fry mushrooms slowly on both sides until golden.

When the mushrooms are no longer moist, drizzle with soy sauce and sprinkle some black pepper.When cool, tear by hand.





Prepare all the filling of your choice.

Raw, boiled, pickled, blanched vegetable or grilled mushrooms,anything.


If you cut carrots into long pieces and boil them slightly, the sushi becomes so easy to roll.(see step 4)


How to roll this sushi.

Step1

If you want to make sushi rolls exactly the same size as this picture, weigh the rice to 150g. This is quite important.


A roll made with 150g of rice is about the size of a sliced banana when they are sliced.(Make sure the steamed rice is no longer hot )



Step 2

Place the nori sheet on the mat or a cutting board.

Place rice to fill about two-thirds of the nori, sprinkle with sesame seeds, cover with a plastic wrap, and press the sesame seeds down with your hands.


Step 4

Flip the nori sheet slowly.

Place some filling of your choice.

Imagine the volume of a peeled banana. Not more than that.




This is a bad example of over volumed filling↓

It's going to end up a loose sushi.

And placing avocado slices on top of other filling is also problematic.

They will slip easily.


Step 5

Pick up the nori sheet, start rolling from the bottom up.

Once you see the rice, stop rolling and make sure the filling is packed tight.


Step6

Now pick up the plastic wrap at the bottom.

Roll it up from the bottom to the top, slowly and tightly.


How to slice sushi

Make sure the knife and your hands are both sufficiently wet.

Move the knife as if you were slicing a baguette.

Slice sushi rolls into 8-10 pieces.



Done:)

Enjoy your rolls with some sauce of your choice,

Miso soup, boiled edamame, etc.




If you have a lot of leftover filling ingredients, you can toss them all together in a bowl to make a salad.

I added dill, sesame oil, rice vinegar, and soy sauce.
