Almost instant Knödel



I would love to share the recipie of my almost instant knödel.

Because they are so easy to make !


But what is knödel?

They are usually made from flour, bread or potatoes and often served as a side dish

in Germany.


Ingredients for 4 pieces of knödel

200 g bread (fresh bread purchased today, not from the previous day)

2/1 cup chopped onion (frozen)

A pinch of nutmeg

A pinch of pepper

2/1 tsp salt

1 tbsp Italian parsley, chopped (frozen)

2 tbsp soya flour

1 tbsp oat meal

1 tbsp cornstarch

10ml olive oil

180 ml almond milk

+ A pot of vegan broth

+ 1tbsp slept flour (to form balls)

+ some sauce of your choice


Heat the olive oil in a pot and Sauté the onions.

When the onions have softened, add the almond milk and warm it.

Add the nutmeg, black pepper and oatmeal and stir.

I got two of this type of bread today(from the store) as they weighed just 200g.

Turn off the heat of the pot with the almond milk.

Tear the bread into small pieces with your hands, as if you were feeding pigeons, and place them all into the pan to soften.


Soya flour is then added.

The reason for adding soya flour is to balance the types of protein.

Of course, chickpea flour will also work well.

Add cornstarch and frozen herbs to the mixture.

Cover the pot with a lid and let it steam for 5-10 minutes.


Wet your hands with water.

When the bread is soft enough, divide into quarters and form 4 balls.


Sprinkled with a little spelt flour to prevent the bread sticking to plates and hands.

Now warm the vegetable broth in a pot.


Once the balls are in the vegetable broth, boil them for 15 minutes over medium heat. (Cover the pot with a lid to prevent the balls from drying out.)



Serve with your favourite sauce and the main dish.

This sauce is made from a marinade used in other dishes.

Today's main dish was tofu yellowtail and asparagus.


The recipe of my tofu yellowtail and and this sauce will be added later.

Yes. It’s all vegan.Not a real fish.
