Cajun Rice with Fried Tofu



Note

For this recipe I use a pressure cooker.

If you are using a normal pot, you need to remove red rice from the list.

Please check the recipe down below.

The cooking length of Thai red rice and white Jasmine rice is significantly different.



Ingredients for 6 servings.

(Pressure cooker recipe)


1 cup Red rice (soaked in water over night)

1 cup Jasmine rice (not soaked)

2 cups water

2 tbsp tomato paste


1 tbsp olive oil

1 cup flat beans

1 cup carrot or zucchini or any other vegetables of your choice.

200g fried tofu ( Asian fried tofu)


(Spices)

1tsp oregano

1tsp garlic powder

1tsp sweet paprika powder

1tsp smoked paprika powder

1tsp cumin powder

1tsp salt

1/2 tsp chili

1/2 tsp white pepper




Preparation of Asian fired tofu


If you are adding this kind of Asian fried tofu.

Rinse them under hot water to remove excess fat before using.

They are oily.

Dry tofu with paper towel and cut into bite-sized pieces.



Preparation of Thai red rice.

Soak red rice in cold water over night.

Or at least 2 hours to shorten the cooking time.

When you see the bubbles on top ,they are usually ready.

Drain this water well.


Don't soak white Jasmin rice for this recipe, they will be too soft.

So here we have 1 cup of soaked red rice, and 1 cup of dry Jasmine rice.





STEP 3

Prepare all the spices in a bowl.


STEP4

Add olive oil in the pot and saute vegetables and rice for a couple of minutes.

Or skip this part and just add everything in the pressure cooker.(Instantpot)



STEP 4

Mix well before start pressure cooking.


STEP 5

Pressure cook them for 12 mins.

And that is all!







If you don't have a pressure cooker/instant pot

you can make this dish with a big frying pan.

And please only use Jasmine rice.

4 cups water

1 tbsp olive oil
