A side dish we made at an event (04.05.2024).
For this salad, I personally like to use mehlig kochend kartoffel.
That means a starchy type of potato.
So don't over cook them otherwise they will lose their shape.
And it's not necessary to put mayonnaise in a potato salad.
Enjoy adding colorful vegetables , different textures, and flavorful pickles to your salad.
Dress them with your favorite herbs to create unique combinations:)
Ingredients for 6 side dish portions.
3 cups boiled potatoes (7minutes boiled then cooled )
1 cup pickled beets
1 cup sliced carrots
1/4 cup chopped parsley
1/4 cup Kalamata olives (about 10 olives)
1/4 cup red onion (sliced)
1tbsp pickled caper
1tbsp EV olive oil
Black pepper to taste
STEP 1
(Option)
Pickle red onion slice in the beet juice one night before.
So the onion will be a fancy color and tastes milder.
STEP2
Mix all the ingredients in a bowl.
Store it in the fridge for 30 mins before serving.
