Easy Baked Empanadas

This is my another meal prep friendly recipe to share.

Because you can also freeze them.


Ingredients for 8 pieces.


For the dough

220g wheat flour (405)

110ml warm water (60℃)

3g salt

2g sugar

20ml olive oil


For the filling

80g simple tomato sauce (toscana sauce from Alnatura)

80ml cup of dried TVP (soaked and drained ) or 90g canned lentils.

40g quick oats

1 tsp vegan stock (powder)

1tsp garlic powder

1tsp cumin powder

1tsp oregano

10ml light soy sauce (about 1tbsp)

10ml dark soy sauce (about 1tbsp)

60ml cup of chopped walnuts

60ml cup of chopped leek

Black pepper to taste


For vegan egg wash

1 tbsp soy yogurt (not sweet)

1 tbsp olive oil

A pinch of turmeric


STEP1

Add all the ingredients for the dough in a bowl.

Mix everything first with a spoon.

Then kneed the dough with a hand so the dough will not stick to your hand too much.





STEP2

Divide the dough into 4 equal portions and cover to keep it from drying out.

It does not matter if the surface is not smooth at this point.

Let them set aside while we create the filling.

Later we are doing to divide each ball into half.



STEP3

Preheat the oven for 220℃

And boil some hot water to soften TVP.

After a few minutes of soaking ,drain the water completely.


OR this kind of boiled lentils. (rinse well and drain water as well)





STEP4

Combine all the ingredients for the filling in a bowl.

At the event we used this canned tomatoes but any canned diced tomatoes will do.




Mix well with a spoon.

When the whole mixture looks like this,

divide them into 8 equal portions.


STEP5

Halve the four dough balls to make eight smaller dough balls.

Make 8 wrappers about 10 cm in diameter.

Add the filling on each wrappers and seal them.







STEP6

Make some vegan egg wash by just mixing following ingredients.

1 tbsp soy yogurt

1 tbsp olive oil

A pinch of turmeric in a small bowl.


Simply brush this vegan egg wash over each pieces to create a subtle golden hue.





STEP7

Bake them for 20 minutes at 200℃ until golden.

Serve it with some salsa and avocado dip.





Done ! Serve them with dips of your choice.

At the event of the 18th May 2024.

We made these 3 dips.


Quick salsa (left over canned tomatoes/onion/garlic/salt/pepper/cumin/chili)

Avocado paste (half avocado/1tbsp frozen herb/juice of 1/4 lime/salt)
