This is not authentic Vietnamese dressing but I made something
something quite similar to that.
You can adjust chili level to suit your own taste.
I made this dressing mildly hot.
Ingredients
250ml water
Juice from 1/2 Juicy lemon
2tsp salt(Iodized salt)
1tbsp (15g) raw cane sugar
1/2 garlic clove
1tbsp chopped fresh chili
1tsp sambal oeleck (if you want it milder use sweet chili sauce instead )
10ml flax oil (optional)
Black pepper (about 1tsp )
60ml Kombu dashi soy sauce (or light soy sauce)
STEP 1
Chop chili and garlic (finely)
If you want it spicier you can add one fresh chili pepper but
I only used half of one chili pepper without seeds.
STEP2
Mix everything well with a spoon.
Cool it in the fridge.
I added cold pressed flax oil just before I use this dressing.
Flax oil x Kombu dashi soy sauce is a great replacement for a fish(soy)sauce.
But If you don’t like the smell ,just skip it.
It goes very well with vegan Bun Chay Vietnamese noodles :)

So the portion size below is doubled.
But you could make this much and slowly use them in next 4-5days.
