Mountain Lentil Salad

Ingredients (about 700g in total )
Boiled and cooled lentils (Mountain lentils/Berglinzen) 300g
2tbsp EV olive oil
Salt and pepper to taste
Vegetable of your choice
1/2 yellow bell pepper
1/2 red bell pepper
1/2 cucumber (seedless)
Lemon peel and juice from 1/2 lemon
1tbsp chopped parsley
1tbsp chopped mint
1tsp sumac
1tsp cumin powder
1 finely chopped small garlic clove
STEP1
Strain water very well from the boiled lentils before making salad.
Drizzle olive oil over the lentils, and mix well.
STEP2
Chop vegetables.
Sprinkle herbs and spices over the vegetables.

STEP 3
Combine everything in a bowl and mix well.

STEP4
Keep this salad in the fridge for at least 30mins so that it can absorb more flavor.
A serving idea.
Vegan chickpea flour omelette goes well with lentil salad :)
