I know every country has their own version of Tomatoes and tofu dish.
But this one is what I personally like.
If you have a bag of Japanese 7 spices chili and don't know what to cook with.
Try this one.
If you don't have 7 spices chili, just skip it or add any other chili.
Ingredients for 2-3 side dish servings
For tomato sauce
100g fresh tomatoes
100g canned diced tomato
30ml water
A pinch of raw cane sugar
A drizzle of light soy sauce
10ml roasted sesame oil
15g spring onion (white part)
5g fresh ginger
5g fresh garlic
1tbsp brewer's yeast
For scrambled tofu
10ml EV olive oil ( to add yellow colour )
225g medium firm tofu from Asian store ( a half pack)
1/3 tsp turmeric
1/3 tsp Japanese 7 spice chili
1/2 tsp black salt
Topping
A handful chopped green onion.
STEP 1
Make scrambled tofu over a medium high heat.
Once they are done, set aside.
We are going to put this back in a pan later.
STEP2
Chop aromatics, and slowly roast them with over a low to medium heat.
Here I usually use a flavorful roasted sesame oil.
STEP3
Fry fresh tomatoes in the same pan for 3-5 mints.
And then add the canned tomatoes and 30ml water.
STEP4
As soon as the content looks like a thick tomato sauce.
Season it with a pinch of sugar and a drizzle of soy sauce.
STEP5
Place your fried tofu back in the pan, shake the pan for a few times.
But don't mix them too well.
STEP6
Transfer this tofu dish into a bowl.
Top with freshly chopped green onion.
