Jing’s wonton soup

And this is the recorded recipe from the WS.

We prepared wonton for 9-10 servings in the workshop of 10.04.2023.

This recipe has been adjusted to a smaller quantity.


Recipe for a big bowl of wontons (1-2 servings)

Wonton wrapper 12-15 sheets


Wonton fillings

Shiitake mushroom (soaked and softened) 1-2 pieces

1/2cup chopped king oyster mushroom

1/4cup shredded carrot

1/3cup frozen kale ( Thawed and squeezed)

50g extra firm tofu

1/4cup leeks

1/4cup green onion

1/2 tsp chopped ginger

A pinch of Chinese 13 spice mix

2tsp soy sauce

1tsp corn starch

White pepper and salt to taste


(1) Prepare all the ingredients

Let’s crumble tofu first like this. (Just by using your hand)


(2) Chop mushrooms as small as possible.


Those are the softened shiitake mushroom.(or you can boil them quickly)

(2) Shred the carrots with using this kind of cheese grater.



(3) Chop some onions, leeks and ginger.



(4) Separate the green onions into white and green parts.

The green part should be used as a topping.

(5) Heat a small amount of oil in a frying pan and fry the white part of the green onion and leeks and ginger.

When the leeks are fragrant, add the carrots and mushrooms.

When everything is cooked ,remove the veggies from the pan and add kale in the

same pan.

Let the kale absorb the aroma for a while.( No need to fry them)


(6) Heat a small amount of oil in a different pan and fry the tofu with

a pinch of Chinese 13 spice mix,salt,pepper and soy sauce.



(7) Mix the seasoned tofu and veggies together in a container.


(8) Sprinkle some cornstarch over the mixture and mix it to make it viscous.



Now the party time !


(9)Prepare a bowl of water besides you.

Wet one side of the wrapper with water and place about 1 teaspoon of the filling on top.Fold the wrapper closed.


Form it into the desired shape.


(10) Boil enough water in a pot and add a pinch of salt.


(11) Boil wontons for a few minutes until they float and become somewhat transleucent .

Do not discard the boiled water as some of that will be added to the soup in the step 13.

(12) Chop coriander for the topping




Wonton’s soup (for 12-15 pieces of wontons)

400ml shiitake broth ( boiled or soaked water of dried shiitake)

100ml starchy water (from boiling wontons from the step 11)

2tsp of soy sauce (or more to taste )

1tsp roasted sesame oil

1/3tsp salt

White pepper taste

(13) Add all the soup ingredients in a pot and bring it to a boil.


We are almost done! Let’s assemble all together in a bowl.


Wonton’s soup toppings

Roasted nori seaweed(sesame oil /sesame seeds/salt) seasoned and dried in oven.

Sesame oil

Soy sauce

Coriander (optional)

Chili oil (optional)





(14) Add any optional topping of your choice in a serving bowl.

(15) Add the boiled wontons(from step 11) and pour the soup(from step 13) into it.
