Minestrone (Meal prep friendly)

Minestrone is a thick tomato soup filled with a variety of other vegetables, potato, beans and pasta.
This is what I eat very often all the time and i'm still not tired of it.
The potatoes are essential to thicken the soup with this recipe.
And this recipe is exactly how I like it :)
Minestrone soup for 3 big tapper ware(about 700g each )
(Ingredients list A)
20g EV olive oil
15g freshly chopped garlic
100g chopped red onion
100g chopped carrot
(Ingredients list B)
100g flat beans (or bell pepper )
100g chopped aubergine
200g zucchini
20g tomato paste
5g salt
(Ingredients list C)
You can add frozen summer vegetables optionally
250g frozen tomatoes or 250g frozen bell pepper
(Ingredients list D)
400ml water
10g vegetable broth powder or (1tbsp shiro miso with 2tbsp water)
10g pickled salted caper
1tsp brewer's yeast
1/2 tsp cumin powder
1tsp dried oregano
(Ingredients list E)
400ml can of tomatoes (diced)
(Ingredients list F)
100g Gnocchetti or any short pasta
100g diced potatoes
Water and a pinch of salt for boiling
Topping
Grilled almond tofu (with a bit of olive oil)
Garlic bread
Freshly chopped parsley
Black pepper
STEP 1
Sauté all the ingredients from the list A for 5mins.
STEP2
Sauté tomato paste first and then all the ingredients from the list B for 5mins.
(Chop fresh tomatoes in the mean time)
STEP3
Add all the ingredients from the list C for about another 5minutes.
STEP 4
Add all the ingredients from the list D, let it simmer for 10minutes.
(Start step 5 in the mean time)
STEP 5
In a sauce pan boil 100g Gnocchetti and diced potatoes for 10minutes
or until al dente .
Drain water.
STEP 6
Add boiled Gnocchetti and the potatoes in the soup.
Sprinkle some black pepper.
Serve the soup with optional toppings.
Like lentil curry this is a very good recipe to meal prep.
It should be kept in the fridge and tastes good for a few days.
I keep my grilled almond tofu (50g each ) and bread on the side when I pack them.
