Sticky Oyster Mushroom and the sesame dressing

How can I start eating mushrooms for health benefits even if I don't like them?

Such a question arose a few years ago.

And after a lot of trial and error I found some ways to enjoy eating mushroom.

This is one of the easy topping recipe on repeat.

(If you want to use diced firm tofu instead of mushroom it's also possible. )


Ingredients for 3 small topping portion.

100g Oyster mushrooms

1tbsp heat stable oil

1tbsp corn starch

A container with a lid


Seasoning (dry)

1/2 tsp garlic powder

1/2 tsp oregano

1/2 tsp vegan broth powder (or a pinch of salt)

1/2 tsp sweet paprika powder

1/2 tsp cumin powder


Seasoning(wet)

1tsp 〜 1tbsp apricot jam or any sweetener

1tsp soy sauce.


STEP 1

Add 1tbsp of corn starch and 100g of oyster mushroom in a container.

Place a lid and gently shake it.

This way, your hands can stay clean and there is no waste.





STEP 2

Heat 1tbsp oil in a frying pan.



STEP 3

Place all the mushrooms in one layer.


STEP 4

As soon as they begin to water, press down on them with a spatula.

This way the mushrooms will crisp up quickly.




STEP 5

After 5mins or so the top side is still juicy, but the bottom side gets crunchy.

Flip over at this point.



STEP 6

The bottom side will be crispy in a couple of minutes.



STEP7  (Optional)

Tear or loosen the mushroom chunks.

Turn off the heat not to burn the spices in the next step.


STEP 8

Sprinkle spices over the fried mushrooms first.

Then add 1tbsp apricot jam and 1tsp soy sauce.

Toss with the sauce and that is it.






The sticky mushroom goes well with such an Asian dish as well as any green salad.

Making this dressing is also very easy !

Just add everything in a jar with a lid and shake it.


Ingredients for the dressing


・25ml soy sauce

・5ml roasted sesame oil

・10ml neutral oil (any oil)

・Pinch of salt

・1 tsp roasted white sesame seeds

・1 finely chopped one small garlic clove

・10ml rice vinegar

・2/1tsp brewer's yeast
