These kidney bean patties can be used for burgers and sandwiches.
It is a very convenient versatile recipe!

KIDNEY BEAN PATTIES FOR 4-6 SERVINGS
Ingredients for patties Kidney beans (from a 400ml can ) 265g
1/2 cup shredded carrots
1/2 cup chopped onion 1/2 cup shredded potato
1/2 cup oat meal
1tbsp ground flaxseeds
1tbsp chia seeds
1tsp oil
You can replace kidney beans with black beans and
shredded carrots with shredded mushrooms as well.
Seasonings 1tsp garlic powder 1tsp cumin powder 2tbsp tomato ketchup
1tbsp smoked paprika 1tbsp soy sauce A pinch of nutmeg/salt/black pepper
+1tsp psyllium husk
+Buns or sandwich bread slices & Vegetables of your choice First rinse the beans in- water and place them on a baking tray.
Bake at 200°C for 15- 20minutes to dry the beans.
We are baking beans here so that they don't become mushy patties.
Heat the oil in a frying pan and add the shredded carrots, potatoes and chopped onions.
Sauté for 5 minutes.
When the vegetables are transparent, add the spices and turn off the heat.
Next, add the ingredients that do not need to be stir-fried.
These include soy sauce, ketchup, oatmeal, chia seeds and flax seeds.
The mixture will become moist in a few minutes.
Finally, add psyllium husk in order to increase the viscosity.
This makes it much easier to form patties and increases dietary fibre.
(If psyllium husk is not available, potato starch can be added.)
When the kidney beans are dried, remove them from the oven.
It is easily crushed by hand when they are cooled a bit.
No need to make hummus, there is a little bean shape left and that is perfect.
Mix all the ingredients with the baked beans.
Form a flat round shape and divide into quarters.Then form them into putty shapes.
Heat some olive oil in a frying pan and fry patties on both sides.
Done!

and homemade vegan mayo.
Vegan mayo
1tsp cold pressed rapeseed oil
1tsp dijon mustard 4tbsp soya skyr or yogurt
Salt/black pepper/garlic powder
