Soy satay & workshop memories 15.07.2023

The full recipe for today's event is below.

Delicious soy satay (tempeh& tofu skewers )marinated ,grilled and served with peanut sauce.

Very easy to make, not fatty recipe.


Ingredients for 2-3 servings (6 skewers)

200g medium firm tofu

200g tempeh


Ingredients of marinade

2tbsp light soy sauce

1tbsp roasted sesame oil

A pinch of salt &pepper

STEP 1

Slice toy products in to a bite size pieces and sprinkle some salt and pepper.

STEP 2

Mix soy sauce and sesame oil and apply with a brush.

You don't have to marinate them as they are served with more sauce.

STEP3

Preheat oven to 200°C and bake skewers for 15 minutes.

It is not necessary to turn them over during the baking process.

While these are baking in the oven, make the sauce(see step 5)


STEP4

After 15 minutes, remove the skewers from the oven and turn them over.

How to make satay sauce

Ingredients

120ml oat milk

60ml coconuts milk

1tbsp vegan hoi sin sauce

1tbsp peanut butter

1tsp curry paste(yellow)

20ml dark soy sauce ( for the dark color)

1tbsp roasted sesame seeds

1tbsp chia seeds

+ juice from half a lime


Optional preparation

Roast the sesame seeds in the oven while we are making sauce.

Grind roasted sesame with raw chia seeds.

This makes it easier to absorb the nutrients from the seeds.

We are going to add this seeds in the sauce later.

If you are busy ,skip this step.

STEP 5

Heat the coconut milk in a sauce pan and dissolve the yellow curry paste.

STEP6

Add the remaining sauce ingredients and place the pan over a medium heat.

When it thickens and small bubbles appear, turn off the heat and squeeze in the lime juice.

STEP7

Spread a generous amount of sauce on one side of the skewers from step4.

It is not necessary to apply it on both sides as the flavour is strong.

The leftover satay sauce goes well with rice.

STEP8

Place them back in oven and grill them for 5mins.

In the meantime, you can chop fresh vegetables.

  • Serving suggestions

The idea is to make a bed with steamed grain of your choice (rice & quinoa).

Place some colorful vegetables and herbs on a plate.

Finally, top with satay !

You can top it with onion flakes, chili and some roasted peanuts as well.

FAQ

What kind of tempeh and tofu are they? I buy them in Go Asia supermarket.

It’s no problem to buy frozen tempeh. ( this one was also frozen food)

But it must be thawed in fridge over night.

Alternatively, they can be thawed at room temperature within a couple of hours but be careful in summer.


👉You don’t have any yellow curry paste?

Red curry paste or harissa paste can be used instead of yellow curry paste.


👉You don't have vegan hoi sin sauce?

You can also use sweet chili sauce/ketchup/miso/sambal sauce etc.

Vegan hoi sin sauce is a sweet soy sauce.


👉You don't have chia seeds?

You can use flax seeds for the omega 3.

Or just 1tsp corn starch + 1tbsp water to thicken the sauce.


👉You don't have peanut butter?

Tahini( sesame paste) or almond butter will do.
