Spinach & mushroom quiche




It’s not just vegan quiche

but it’s loaded with vegges and mushrooms

and reduced fat recipe.

This Quiche Recipe starts with an easy home made crust.

I happened to have some frozen spinach, raw potatoes ,

onion and mushrooms today but you can add any veggies you have.


Ingredients for a 23cm round quiche

(For the crust )

150g wheat flour (I have used type 405)

100g almond flour

3g salt

Some black pepper

160ml warm water

About 5ml olive oil to brush (on the cookie sheet)

About 5ml olive oil to brush on the surface of the crust.


STEP 1

Mix all the ingredients in a bowl ,pour water slowly.

Stir it with a spatula.( you can not kneed it with hands as they are too wet )



STEP2

Place a parchment paper on top of the mould.

Brush with a small amount of olive oil.

STEP3

Wet your hands with some water.

The dough is sticky, but you can use wet hands and a spatula to

spread the dough over the mould.

It does not feel like an original pie sheet, but that is not a problem.



STEP 4

Brush with a small amount of olive oil.

Bake this dough for 10mins in the oven (190℃)

The crust should look like this after 10mins

(It’s still soft and underbaked but that’s all right)


While you are baking this crust, prepare the filling.

STEP 5

How to prepare the filling

Slice or shred 4 cups of vegetables of your choice.


Today I decided to add these ingredients.

1 cup of shredded raw potatoes (=1 medium size potato)

1 cup of red onion slices

1 cup of brown champignons(=3 big size champignons)

1 cup of frozen spinach

10mi olive oil for frying

1tsp ground flax seeds

1tsp vegetable broth powder (alnatura )

1/3 tsp white pepper

1tsp caraway seeds

1tsp garlic powder

I added a bit of carrots at the end.


Sautee the veggies with a drizzle of olive oil for 10mins.

The filling should not be soggy.

Don’t skip adding some flax seeds here.

The seeds absorb water a lot and the filling will get thickened.

STEP6

Place the sauteed vegetables on top of the crust.


STEP7

Let’s make the vegan egg mixture quickly.

In a bowl add all these ingredients and stir it.

This is like a joke but you don’t even need any vegan cheese.


100g soy yogurt

20ml olive oil

1tsp sugar (in case the soy yogurt is not sweet)

2tbsp brewer’s yeast

1/2 tsp black salt

1/2 tsp turmeric

1/2 tsp garlic powder

A pinch of pepper




STEP9

Bake it in the pre-heated oven for another 30mins.


(If you want the crust to be crispier ,remove the mold after the step9

and bake it for another 5mins.


The quiche is done! Sprinkle some black pepper once more.


But I would let it cooled down for a while before slicing.
