Toasted sandwich with fresh and grilled veggies




There are many simple ways to eat a lot of veggies and here is one idea.


Filling sandwiches !


Ingredients


Toast bread of your choice.

Vegetables of your choice

(Bellpepper,carrots,grean beans, red onion

Freshly sliced tomatoes, cucumber , avocado, sprouts and smoked tofu )


Dijon mustard, vegan mayo etc.

Salt&pepper

Olive oil


STEP1

Prepare grilled veggies

Drizzle small amount of olive oil on the vegges that goes into the oven.

Grill them for 20mins at 220℃


STEP2

Toast sliced bread of your choice.

I brushed some olive oil to make the slices crispy.

But if you want to reduce fat you can brush oil on just one side of the toast

or just toast them without oil.

Spread some mustard on the toasted bread just before you place veggies on top

of them.


STEP 3

Prepare fresh veggies such as tomatoes, cucumbers, wash and paper dry

leafy greens.

If you slice smoked tofu as thin as possible , they look and tastes like turkey ham.



STEP4

When the grilled veggies are done, bring all the fresh and grilled veggies

in front of you.

Make a pile of veggies in between toast breads, as high as possible.

Use the skewers to stable the filling. This is like 10cm high.

STEP 5

Slice it into half.



If you don’t have this kind of skewers ,just use a wax paper to wrap everything

in between bread slices.

So you can add a lot of healthy fillings.

These are wrapped with the wax paper and then sliced with the wrapper.


There are wrapped with bread bags and then sliced with the bags as you can see.



German super markets and drug stores usually offer such bread bags.

And they are quite useful when you want to use them as wrapper.
