Vegan paella

You can make a delicious vegan paella in your own kitchen with simple ingredients such as rice, beans, vegetables, and spices.

Originally saffron infused water is added to give it a nice color, and to add the exotic flavor but if you don't have it you can add some safflower and fresh tomatoes. ( Safflower is often available at a Turkish supermarket)


I use a normal small frying pan for this dish. (28cm)

Ingredients for 3 servings


1cup of red bell pepper and carrots

1/2 cup of flat green beans

100g cherry tomatoes

1tsp garlic

1tsp salt

1tsp pickled capper

1tsp safflower

1tsp smoked paprika

1tbsp brewer's yeast

1tbsp EV olive oil


250g short grain rice

650ml water


1tbsp EV olive oil (optional )

Juice from 1/2 lime

Lime slices from 1/2 lime

1/2 cup chopped parsley

Black pepper to taste





STEP 1

Rinse and soak rice in water for 15mins.

Drain water before adding in a frying pan.


STEP2

Heat 1 tbsp oil in a frying pan and sauté the vegetables.



STEP 3

Add salt, smoked paprika powder ,pickled capper ,safflower and freshly chopped cherry tomatoes.


STEP4

Add the rice and stir-fry for a few seconds before the vegetables become too soft.

Pour water, give the whole thing a stir (do not stir too much).

STEP5

Bring it to a boil over high heat then cook it over medium heat in total of 15mins.

(When the water amount is reduced cover it with a lid. )

STEP6

After the step 5, remove the cover and sprinkle some brewer's yeast.

It is added because it makes this dish very flavorful and nutritious,

but it is not an essential ingredient.



STEP7

How to make scorched rice(Optional)



When the water has reduced to the point where these bubbles are no longer visible

and you start to hear crackling noises, drizzle the edges of the frying pan with oil.

And cook it over high heat for 1-2minutes.

Add lime juice to taste.

Remove the pan from the heat, cover the rice and steam for 15 mins.

Finally, garnish with lime, herbs and a sprinkle of black pepper.
