In this blog ,I’m going to share today’s ramen topping’s recipes.

Topping ideas .
Ingredients
3tbsp olive oil
1tsp 7spice chili flake (Japanese chili flake)
1tsp chili flake
1tsp brewer’s yeast (d.m’s Bier Hefe)
1tsp fermented salted black beans, (from go Asia)
1tsp sesame seeds
1/2 tsp salt
How to make this chili oil.
STEP1
Add all the dried ingredients in a bowl.
You can also chop beans before adding in this bowl.
This fermented beans are sold in this kind of package.
(You can freeze them and it lasts sooo long.)
I used this Japanese 7spices chili at the WS today.
But you can use just normal chili flake with some spices of your choice too.
STEP2
Warm olive oil slowly and stop heating it just before it smokes.
STEP3
Pour oil in the bowl of spices.
let it sizzle right there, for a while.
When it’s cooled down a bit, it’s ready.
Topping ideas
(2) Pumpkin and bell pepper
Slice some pumpkins as thin as possible.(about 6mm thick)
Brush small amount of oil on top, sprinkle some salt and bake them in
the oven (220℃)for 20-25mins.
We spontaneously baked sliced tempeh with pumpkin slices as well.
Sliced bell peppers are grilled in the same oven for 20mins. (no oil added)
Topping ideas
(3) Cloud ear mushrooms.
Grab a hand full of dried cloud ear mushroom. (from Go Asia)
Soak them in hot water for 15mins. (or hours in cold water)
When they look rehydrated enough, discard the water and slice the mushrooms.
You can add them in soup or just use as topping.
