Japanese-style Dan Dan Noodles

This is a recipe of Japanese-style dan dan noodles from my cooking event of July 1st.

I call it Japanese-style because dandan noodles are originally

Chinese dish, and usually served without soup.

In Japan it’s served with mildly spicy sesame soup and known as

Tantanmien :)


In the workshop we used this raw noodles. ( I bought them at Goasia)

It takes only a couple of mins to boil raw noodles unlike dried noodles..

So the most important thing is that having all the toppings ready before

you boil noodles.



Today’s topping No.1 Nutty tofu

This easy seasoned tofu is a great topping that goes well with rice, noodles

and wraps.

It’s a great alternative of meat or any prosessed vegan ground meat.



Ingredients

200g medium firm tofu

1/4cup chopped walnuts

1tbsp heat stable oil ( peanut oil )

Pepper


🥣Seasoning mixture 🥣

1tbsp Toban Djan

1tbsp (light)soy sauce

1tbsp raw cane sugar

1tbsp water

STEP1

Heat the oil in a frying pan and stir-fry mushed tofu for 5 minutes.

Allow the tofu to get dried.

STEP 2

When tofu looks like this image, it’s time to add chopped walnuts.

STEP 3

After adding chopped walnuts, keep roasting them for 2 mins.

STEP4

Add the seasoning mixture and stir with a wooden spoon over high heat to caramelise. Add some pepper if you would like.

Done !

Topping No.2 Bok choi

ree

Ingredients

250g fresh bok choi

1tsp fresh ginger (chopped)

10ml roasted sesame oil

A pinch of salt & pepper

STEP1

Chop your Bok choi in this way and separate the light green part and green leaves. Because we are not going to grill leaves.

STEP2

Heat some roasted sesame oil and grill the sliced stem sections over high heat for 3 minutes each side until they turn brown.

STEP3

Add leaves and chopped ginger,salt,pepper and then some water.

Cover with a lid and steam it for 1min or so.

STEP4

When everything looks greener and juicier it’s done..

Finally,

Let’s make broth (for 2 servings )



STEP1

Boil Shiitake water ( 6H soaked 1tbsp shiitake+350ml water)

Add 1/2tsp fresh ginger and 1/2tsp fresh garlic.

1tbsp vegan broth powder (Alnatura)

Lastly add 250ml non sweet plant based milk (oat milk ) and keep it warm.

※ Make sure that the oat milk contains less than 1g sugar per 100ml.

STEP2

Now we are going to boil noodles in a separate pot.

Boil a pot of water( 2L or so )

Make sure that the water is 98-100℃ when you add noodles.


STEP 3

Boil them for 3mins

One bundle is 100 g and serves one person.

STEP4

While you are boiling noodles ,add some paste and spices in a bowl.

1tbsp miso

25g Tahini (sesame paste)

1tsp sambal oelek,black pepper,

some sesame seeds and chili beans (Optional)

Mix well.

ree


STEP 5

Strain it and rinse noodles with water to remove starchy coating.

Pour some clean hot water over the cooled noodles to warm them again.

STEP6

Pour 300ml broth from the step1 over the mixed paste from the step 4.Dissolve the paste in the broth then add boiled noodles.

Top with your choice of toppings !

Some extra topping ideas.

Fresh red onion slices, radish sprouts, green onion, boiled broccolies

and store bought fried onion (EDEKA).

This chili oil is a popular topping for ramen(GO Asia)

I sometimes use this white miso.(from Edeka)

It’s not expensive but this brand’s Shiro=white Miso is tasty enough👇
