Bagels in 30mins

This is one of my secret recipe.

I came up with this bagel recipe during the lockdown.

Back then all the dry yeast was sold out in Germany because everybody baked at home, you remember that?

So I had to bake everything with baking powder.


Recipe for 2 big bagels (or 3 small bagels)

150 g Wheat flour (type 405 )

1tsp dry yeast

1tsp raw cane sugar

1tsp baking powder

1/3 tsp salt

90ml lukewarm water


a few drops of olive oil

+Toppings of your choice (Seeds/Pepper/Herbs)

+Some more olive oil for applying with a brush (for the tray)


1tsp blackstrap molasses

A half pot of 80℃ water



STEP1

Combine all the under lined ingredients and mix with a spoon.

The 30mins baking key is the baking powder, so don’t forget that.

Without that baking takes more than 1hour.


STEP 2

Leave the dough like this for 1-2mins.(So it becomes easier to kneed with a hand)

STEP 3

Knead the bread dough 120 times to form a lump.

Then divide the dough into two equal portions.



STEP4

After dividing it into two equal parts, form a ball shape.

Drizzle just a few drops of olive oil to coat the dough to prevent it from drying out.


Leave them aside for 5 minutes.

During this time, bring a pan of water to boil and heat the oven to 250°C.


STEP5

Sprinkle some flour on the dough balls.

So they don’t stick to your fingers.


STEP6

Place the bread dough on a floured plate and pierce a hole in the centre with a stick.


STEP7

Widen the hole with your fingers so that the hole in the middle is as large as the size of €2 coin.(the hole will shrink quickly once the dough is heated)


STEP8

Make sure the boiled water is around 80℃.

If it’s hotter it breaks the texture of the smooth dough ,if it’s too low

the dough sinks and can sticks to the bottom of the pot.

Add 1tsp of black strap molasses in the water, then add bagels.

Boil bagels for 45 seconds on each side.


STEP9

Drain the bagels lightly and place them on an oiled parchment paper (on a baking tray) While the surface of the bagel is still wet, top with the seeds.


For example I had sesame seeds, nigella seeds, sunflower seeds ,and pumpkin seeds.

(sorry this recipe is just for 2 bagels but this picture is an example of the toppings)

When the oven is ready by now, reduce the temperature to 200°C.


STEP 10

Bake bagels for 15mins (200℃)



And done!

Enjoy your bagels with a colorful salad and some healthy spread.





How to keep them fresh?


These bagels contain very little fat so they get harden within a few hours.

They taste the best when freshly baked.

But if you wrap them in plastic wrap, they will remain soft for up to 12 hours.
