VEGAN Biryani





This recipe is rather complicated with many ingredients, so I have separated the ingredient list for one pan and 2 pots.

Please read through the ingredient lists to the bottom of the article.


Biryani for 3 servings


How to prepare spices to start with.

Pan A

Ingredients

★1 tsp cumin seeds

★3cm cassia cinnamon bark

★1/2 tsp coriander seed

★3 cloves

★1 bay leaf

★1 tsp cumin powder

★1/4 tsp cardamom powder

★1/2 tsp turmeric

★1/2 tsp garam masala

★1/2 tsp salt

★1/4 cup fried onions ( 1/2cup onion slices/tbsp oil)

★1 tsp garlic, finely chopped

★1 tsp fresh ginger, finely chopped

★1/2 tsp Shichimi chili pepper or chili pepper

Half a red fresh chili pepper(to add later )

1/4 cup soy yogurt (to add later )

1 tbsp EV olive oil (to add later)



Step1

Fry onions first, then fry all of the spices from the★ list.



When everything is fried ,

turn off the heat then add EVOO and 1/4cup soy yogurt.

Mix it well.


How to prepare veggies

Pot A

Ingredients

2 cups of veggies( potatoes, carrots, green beans, and some broccoli)

500ml water with 5g salt

1/2 tsp turmeric powder


Step2

Boil veggies for 5mins.

Drain water while the vegetables are al dente.

Set them aside.




Step 4

Back to the pan A.

Add these boiled veggies in the yogurt spice.

Mix everything well without heating them.


Add some chopped fresh chili if you would like.

How to prepare rice


Pot B

Ingredients

1 cup of white basmati rice (rinsed)

1000ml water with 1% salt (10g)


1 star anise

2 lime leaves

1/2 tsp cumin seeds

3cm cassia cinnamon bark



Step5


Boil rice in this spiced water for 8mins over high heat.

Don't stir rice too much.

Save 120ml starchy water for the next step.

Drain the rice briefly.

I didn't have saffron this time so substituted with safflower.

(120ml starchy water and a pinch of safflower)




Step6

Back to the pan A again.

Place these al dente rice on top of spiced vegetables.

Pour saffron(or safflower infused) water over the rice, sprinkle some extra spices (turmeric powder, garam masala, some lime juice) and let it cook over a medium heat for 7 mins with a lid.

Then turn off the heat, let it steam for another 8mins (with a lid. )



Step 7

When the rice seems fluffy and cooked, it's done.

There are two separate layers of rice and spiced vegetables at this point.

Mix well from the bottom with a spatula.



Enjoy you Biryani with some topping of your choice.

(Coriander leaves, mint leaves, pepper, fresh lime juice and crispy tempeh etc. )
