Asian Noodle Salad with Sesame Ponzu Dressing

Basically you can incorporate any Asian noodles of your choice and a good volume of vegetables (raw or cooked).
Ingredients for 1 main dish serving
75g Buckwheat noodles (or somen noodles, rice noodles etc)
=1 bunch of dried noodles
1/4 cup frozen edamame beans (without pods)
(for dressing)
5g roasted sesame oil
1tbsp ponzu (lemon flavored soy sauce )
1tbsp tahini (100% sesame paste)
1/2 cup sliced carrot
1/2 cup sliced red bell pepper
1/2 cup sliced zucchini
1tps sliced ginger
(for topping)
1tsp sesame seeds
1/2 cup fresh herbs (green onion, basil, shiso,coriander leaves)
A cup of leafy green ( any leave salad)

Step 1
Chop vegetables and fresh herbs.


Step 2
Warm some roasted sesame oil and Sauté some vegetables of your choice for 2-3 minutes over a medium heat.
(ginger, carrot, bell pepper and zucchini)
Step3
Boil water in a big pot.(no need to add salt)
Add frozen edamame beans and boil them for 1-2 minutes.
Wait until the water boils again once the temperature has dropped.
Add dry buckwheat noodles in the same boiling water.
If you are using dry buckwheat noodles, keep in mind that 3 to 4 minutes is required.
Edamame should be boiled for at least 5 minutes in total.

Step 5
Rinse boiled ingredients under cold water.
Drain water from boiled noodles thoroughly.

Step6
Marinate boiled noodles and beans with 5g roasted sesame oil in a bowl.
Toss noodles and beans with dressing(1tbsp sesame paste/1tbsp ponzu)
Step 7
Serve noodles with vegetables, fresh herbs and sesame seeds.

(These white noodles are called Somen in Japanese)
