Penne salad for 3 servings
Boiled penne ( 250g=dried form )
Boiled green beans (6mins boiled with some salt)
1 cup massaged and dehydrated cucumber slices (with some salt)
1cup shredded smoked tofu
50g frozen chopped Italian parsley
50g freshly chopped tomatoes
2tbsp soy yogurt
1tbsp Dijon mustard
1tbsp EV olive oil
1tsp salt&black pepper
+Leafy greens (to serve with )
Just simply mix all the ingredients in a big bowl.
And let it chilled in the fridge while you are working on
some grilled veggies.
Ingredients for the grilled veggies
1 cup of chopped carrot
1 cup of chopped red bell pepper
1 cup of green onion(or leek)
1 cup of chopped fennel
250g of cherry tomatoes (sliced in half )
About 1tbsp EV olive oil
1tsp salt
1tsp sugar (on tomatoes )
1tbsp brewer’s yeast
Black pepper
some garlic to roast with veggies
Sprinkle seasonings of your choice on all the chopped veggies.
Sprinkle sugar on top of each tomatoes so they get caramelized.
Bake them in the oven for 20-25mins.(200℃)
After 20-25mins , the veggies should look like this.
These veggies are ready to be served with your cooled penne salad.
