Baked potato with dill sauce

Say goodbye to potato salad drenched in mayo and humbly devour this 😂
Ingredients for 6 side dish portions.
650g drillinge potato (raw)
50g green beans(raw)
(A container )
30ml EV olive oil
2 cloves of garlic (minced)
1tsp sweet paprika powder
1tsp oregano (dried)
1/2tsp salt
Ingredients for the sauce
4tbsp soy yogurt
2tbsp mustard Monsieur M. Old Style
1/2 tbsp raw cane sugar
fresh herbs to add later
30g chopped shallot
20g chopped fresh dill leaves
3g or 1tbsp chopped fresh mint leaves
STEP 1
Preheat oven for 200℃
Chop potatoes into the size of a teaspoon.
Add all the chopped potatoes, green beans , olive oil
1tsp salt ,sweet paprika powder ,oregano and minced garlic in the container.
Mix everything well.



STEP 2
Place a baking sheet on the baking tray.
Transfer seasoned potatoes and beans into it.
Bake it for 25minutes at 200℃
(Save the spices and oil , left in the container for the next steps. )

STEP 3
Add soy yogurt ,mustard and sugar in the same container and mix well.
Then add the fresh herbs.


STEP4
After 25minutes of baking, scrape the potatoes to flip sides.
Place the tray back in the oven. Bake it for 5 more minutes.


STEP 5
When potatoes are golden, crispy and puffy they are ready.
Toss in the sauce and mix it well.
The roasted potato salad is ready.

You can serve it immediately.
Or cool at least for 30minutes in the fridge to serve it chilled :)
