Banana Berry Scones

Ingredients for 4 portions or 6 mini scones


120g ripe bananas (= 2 small bananas)

150g spelt flour (type 630)

25g almond flour

25g rapeseed oil with lemon flavor

40g raw cane sugar

1/4 cup chopped frozen berries or small frozen berries

8g Baking powder


+10g extra sugar for topping (optional)

Preheat oven for 190℃


Step1

Mash bananas in a bowl.

Step2

Add all the ingredients except for frozen berries and mix it well.

Then add small frozen berries so they will remain the shape after being lightly mashed.

Step4

Wrap the dough to form a square shape.

(you don't have to rest the dough in the fridge but you could)

Unwrap it and slice into 4 triangle shapes with a wet knife.

Step5

(Optional topping)

Sprinkle about 1/2 tsp of sugar on each scones.

They look rather small pieces at this point but will rise in the oven.

Step 6

Bake scones at 190℃ for 17-20minutes until golden.
