Basil Almond Pesto Pasta

Ingredients for 2-3 main dish portions
For pasta
250g Fusilloni (or any pasta of your choice)
1700ml water +17g salt (or make 1% salt water to boil pasta)
5g lemon juice or lemon flavored rapeseed oil
For pesto
★10g tahini (sesame paste) or 20g plant based milk
★20g EV olive oil
★30g fresh basil leaves (or as much as you like)
★40g almond flour
★50g pasta cooking water (1% salt)
★1/4 tsp salt
★Pepper to taste
Step 1
Boil pasta until al-dente.
Scoop 50g of this salty water from here and add in the pesto ingredients.

Step2
Blend all the ingredients with a hand blender.
(If you are allergic to sesame you can replace it with 20g of plant based milk)


Step 3
Strain pasta.(Don't rinse them with water)
Drizzle some(5g) lemon flavored rapeseed oil or lemon juice on pasta.
Step4
Toss to coat pasta in pesto:)
Serve immediately with or without toppings.
