Braised Aubergines

Ingredients for 6 portions
(Main ingredients)
3 german aubergines
3 tsp olive oil and about 1tsp salt to prepare aubergines.
3 tbsp olive oil for frying aubergine slices
(For the tomato sauce )
600ml canned tomatoes (=1,5 canned diced tomatoes)
1 cup finely chopped onions (frozen onions)
1 cup finely chopped carrots (or bell pepper)
1tbsp finely chopped garlic
10ml olive oil
A sprig of fresh rosemary
+30g soy granules (Or 60g boiled brown lentils)

(Spices)
1/3 tsp cinnamon
1.5tsp oregano
1.5tsp chili flakes
1.5tsp cumin powder (Kreuzkümmel )
1tsp sugar
1tsp brewer's yeast
1tsp salt


(Topping )
1 cup of parsley
6 tbsp high protein soy yoghurt
Black pepper

STEP1 (Preparation)
Peel the aubergines with a peeler to create vertical stripes.
After that, slice them into half.

Score the peeled line of the aubergines with a knife.
Be careful not to slice them completely.
Drizzle some olive oil and sprinkle some salt all over the sliced aubergines.
Coat the them with salt and oil by hand.

The aubergines should sweat a lot after 5 to 10 minutes.
Rinse them with running water to remove salt and oil .
Also wipe out excess moist with a kitchen towel optionally.
This way, the oil does not splash around.
STEP2
Fry aubergine's round side first for 5minutes.
If you press aubergines while frying them they become softer easily.
Flip them and fry the flat side for 5minutes.


When the aubergines look like this, turn off the heat and place a lid.
They are still getting steamed inside.
Put it aside while we make some tomato sauce.

STEP 3
Preparering tomato sauce.
This easy tomato sauce starts with a mirepoix
Warm a drizzle of olive oil in the pan, saute chopped onions, carrots, garlic and
a sprig of fresh rosemary.
If you are using frozen chopped onions, you can saute everything all together.
(The garlic will not burn.)

Add canned tomatoes and the following spices in the mirepoix.
1/3 tsp cinnamon
1.5tsp oregano
1.5tsp chili flakes
1.5tsp cumin powder (Kreuzkümmel )
1tsp sugar
1tsp brewer's yeast
1tsp salt
Let it simmer for a while.

STEP 4
Pour 70% of the tomato sauce into a bigger pan.(Save 30% for the next step)
And place the fried aubergines on the tomato sauce.

STEP 5
Add dried soy granules (TVP) into the rest of the warm tomato sauce.
Soften them for a few minutes.
If you want to add whole food instead of these soy granules you can add
some boiled brown lentils instead


STEP6
Fill the aubergines with tomato sauce with soy granules.

Top with chopped parsley, soy yoghurt and black pepper.
Optionally drizzle with EV olive oil.

And the next day it becomes a pasta sauce...!
