Chickpea omelette (fluffy)




Ingredients


125ml plant based milk(oat milk)

50g chickpea flour(alnatura)

1/2 tsp turmeric

1/2tsp baking powder

1/2 tsp black salt

1/2 cup veggies of your choice (green onion/carrot etc)

1tsp dried herbs (basil)

1tsp ground flaxseed (golden)

2tbsp brewer’s yeast

1tbsp olive oil ( for frying )


STEP1



Add all the dried ingredients in a bowl.

Pour PB milk in the mixture slowly to avoid lumps(about 40ml each time)and mix well.

Add freshly chopped veggies in the batter.


STEP2

Warm some olive oil on medium heat.

Pour the eggy batter into the oiled frying pan.

Fry until you see the small bubbles come out on the surface of the omelette.

It takes about 4mins.



STEP3

Flip it and bake the other side as well. (it takes about 2-3mins)


I made this recipe as a side dish of a brunch cooking workshop.
