Coconut Lemon Dessert

Another no bake simple vegan dessert that makes the dinner little more festive.
Ingredients for 6 to 7 shot glasses
400g rewe (not sweet) coconut yogurt
100ml water
30-35g sweetener of your choice (raw cane sugar)
1 bag (6g) rewe's Agar agar powder
2 drops of bitter almond flavour (or vanilla)
Topping
Vegan Lemon curd (rewe)
Vegan apricot jam
Redcurrant berries(frozen)

Preparation
Place coconut yogurt in the room temperature.
If it's very cold it's hard to combine with agar agar water in the next steps.
STEP 1
Melt agar agar powder and sugar in the water.
Mix it really well.

STEP 2
Bring it to a boil.
Let it boil for at least 2 minutes.
Agar agar gels get activated at a high temperature.
STEP3
Pour in coconut yogurt.
Mix it really well.
Finally add a few drops of flavor of your choice.

STEP 4
Transfer this agar agar coconut into the glass carefully
with using a tea spoon.

STEP 5
Place it in the fridge for about 30minutes.
STEP6
Decorate the top part with some lemon curd or apricot jam.
Top it with berries.


You can make this dessert one day a head.
Just wrap it like this.


This coconut dessert is not as loose as jello but more like a soft tofu texture :)
