This colorful coleslaw is really fun to make.
The most important part is to shred everything thinly.
I use a cheese grater to shred the cabbage.
That makes a lot of fiber much more digestible.
Ingredients for 4 servings
1cup shredded red cabbage
1cup shredded carrots
1cup shredded pickled beets (Edeka’s)
1/2 cup chopped parsley
Juice of 1/2 to 1 lime
1tbsp olive oil
1 tsp cumin powder
A pinch of salt,pepper
Just mix everything in a bowl.
And enjoy with your main dish:)
