Cucumber bell pepper salad

This summerly side dish was served at a shumai cooking workshop.

Ingredients


3 cups of chopped cucumber

2 cups of chopped red bell pepper

1tsp salt (to massage cucumber)


1tbsp nutritional yeast or brewer’s yeast

1tbsp sambal oelek (chili paste)

1tbsp roasted sesame oil

1tbsp soy sauce

1tbsp Ajvar (roasted bell pepper paste)

1tbsp roasted sesame seeds


STEP 1

Sprinkle some salt on chopped cucumber and massage it.

Leave it for at least 10 minutes.


STEP 2

After 10 minutes, rinse the cucumber with cold water and dehydrate by squeezing it.


STEP3

In a big bowl add freshly chopped red bell pepper,the prepared cucumber and the rest of the ingredients.Mix it well.

We made this salad at one of my Shumai workshop.

In the workshop I used nutritional yeast from alnatura(GF)

But this brewer’s yeast from d.m. is also tasty.
