Deconstructed Sushi Bowl

This is a weekly reminder for you and me to eat more vegetables :)
This easy dish consists of pan fried or baked tofu, the freshest toppings, oil free tahini sauce and sushi rice to keep things healthy and satisfying.
No need to roll your sushi for your busy weekday meal because everything is prepared in a bowl!
Ingredients for 2 big servings
2 bowls of steamed rice of your choice.
(This one is 250g rice with 500ml water)
(Sushi vinegar)
40ml rice vinegar
4g suar
A pinch of salt
(Blanched)
4 flat green beans
1/2 cup carrot
1cup broccoli florets
(Pan-fried)
Tofu (200g )
10ml olive oil
(Raw)
1 avocado
1/2 cup cucumber (diced)
1/2 cup yellow bell pepper(diced)
1/2 cup chopped coriander leaves
1/2 cup radish sprout
(Toppings)
1tbsp roasted sesame seeds
(Sauce)
1tbsp tahini paste (sesame)
1tbsp soy yogurt
1tbsp soy sauce
1tbsp water
Step 1
Steam rice and mix with the sushi vinegar.
Let it cooled down a bit.
Step2
Pan try tofu if you would like.
Alternatively add some beans such as boiled edamame.

Serve the sushi bowls with tahini dressing like this one
or pickled ginger if desired. Enjoy:)

So" deconstructed sushi bowl" is one of the meal I would eat at least once a week,
especially when i don't have any ideas of what to eat.
Sushi bowls can look various different ways.
Look around your kitchen, grab whatever fresh veggies or fruits and combine that with sushi rice, serve it with nutty or spicy soy sauce.
