Have you tried the Ethiopian vegetarian dish called "Atakilt Wat "?
This recipe has been adjusted to match my taste.
Traditionally it's made with cabbage, potatoes ,carrots and the spices.
But since I have a lot of celery at the moment, I created this food by substituting
carrots with celery, and some useful frozen ingredients I found in the fridge.
Oh, don't forget to remove tough strings from celery before chopping.
Ingredients for 3 servings
2 cups potatoes(peeled and diced)
2 stalks of celery (chopped )
2 tbsp textured soy protein (boiled)
1 small red onion (chopped)
3 cloves of garlic (minced)
1tsp vegan broth powder
1tsp brewer's yeast
1tsp turmeric
1tsp cumin powder
A pinch of seven spice chili flakes(or any chili)
A pinch of white pepper
1tbsp oil
2cups of frozen cabbage (or freshly chopped cabbage )
Salt and pepper to taste.
STEP1
Heat 1tbsp of oil in a frying pan.
Sauté onions and potatoes for about 10minutes.
When the potatoes turn brown both side , add the rest of the ingredients and the
spices except for the cabbage.
STEP2
Add all the frozen cabbage mix on the fried veggies.
Place a lid on the frying pan.
Let it cook over a medium heat for about 5minutes, so the moisture released from the frozen cabbage steams the vegetables underneath, cook the potatoes tender.
(I'm using the frozen cabbage here so they wilts very quickly but if you are adding freshly chopped cabbage, it takes longer and you will need to add some water )
STEP3
Season with salt and pepper to taste.
STEP4
Serve as a side dish with some carb of your choice, green salad
and other vegan dishes:)
