Easy dark chocolate muffins (2 toppings )

I’m ready to share this unbelievably simple & tasty muffin recipe of mine.

Because it’s Autumn and you need to get cozy with a book, warm drink and

something sweet 🍁


Ingredients for 9 muffins (5cm)

200 g spelt flour (type 630)

230 ml fruit juice ( orange ,or apple mango etc )

40 g olive oil

10 g baking powder

40 g cocoa powder

2 tbsp ground flax seecds

120 g raw cane

1/2 teaspoon dark chocolate chips per muffin 

1/2 tsp roasted hazelnut toppings per muffin




STEP1

Preheat the oven while preparing the dried ingredients.


STEP2

Sift all the dried ingredients and mix in a large bowl.


STEP3

Pour all the wet ingredients in the bowl from the step 2.



I usually add orange juice in here. But today I bought this 230ml Juice from

edeka so I don't need a measuring cup.

This juice is thicker than fresh orange juice.

In case you want to add fresh orange juice 200ml can be enough.


STEP4

Scoop the dough with a disher and place in cups.


STEP5

Sprinkle some toppings.

These are edeka’s dark chocolate chips.

Also edeka’s roasted hazelnuts toppings.



STEP6


Bake at 180°C for 17 minutes.




And that's it!

There is no way to fail, right?

You can also replace half the spelt flour with almond flour.

These are the half almond half spelt muffins.




Ingredients for 8-9 muffins

100 g spelt flour (type 630)

100g almond flour

200 ml orange juice

40 g olive oil

10 g baking powder

40 g cocoa powder

3 tbsp ground flax seed

120 g raw cane

1/2 teaspoon dark chocolate chips per muffin 

1/2 tsp hazelnut toppings per muffin
