Easy spring rolls

Ingredients for 25 rolls
4 cups chopped veggies of your choice
(Chinese cabbage, carrots, bell peppers, broccoli etc.)
1 tsp chopped ginger
1 tbsp vegetable broth powder(Alnatura)
1 tbsp chia seeds
1/2 cup oatmeal
A pinch of pepper
+ olive oil oil
Let’s make the filling!

Add all the vegetables and vegetable broth powder (or a pinch of salt) in a saucepan and heat without adding oil.
When the vegetables release juices, turn off the heat.

Add chia seeds and oatmeal.

Stir for 2-3 minutes until the oatmeal becomes soft and sticky.

Scoop out about a table spoonful of the fillin and place on the spring roll wrapper.

Wet the top corner of the wrappers with water so they will be sealed nicely.

Heat the oil in a frying pan and fry them with enough oil.(sealed side first)
Turn them around and brush some oil onto the spring rolls halfway through cooking to ensure even browning.
( I used about 10ml olive oil for 7 rolls )

Serve with some cooked grain of your choice and salads.
