Ehomaki/Workshop


On the 3rd of February the day of the winter equinox. People eat this thick sushi rolls called Ehomaki in Japan. Eho-maki is made with seven ingredients representing seven gods of good fortune. (Eho means a lucky direction, and maki means rolled sushi.) This sushi(representing happy year) should not be served sliced so that happiness will last all year round.

And the whole roll should be eaten silently facing the year's lucky direction. The year 2023’s lucky direction is south south east. In this workshop each of us made one (big) Eho-maki roll with 7 vegan ingredients.

We sliced the rolls tho at the end.

It was one day late anyways.

The 7 filling can be anything but I also enjoyed sharing this really easy chick pea omelet as one of the filling.




For the sushi vinegar ,I used those products. (but you can just use sugar instead of mirin or store bought sushi vinegar is already sweetened)

I incorporated this iodine salt.

Each person had at least 2 Nori sheets and a pinch of iodine salt for this event ,that should cover a recommended daily dose of iodine.
