This gnocchi recipe is a simplified version of my basic gnocchi recipe.
This way is faster if you are used to making gnocchi.
However making gnocchi can easily go wrong.
So please pay attention to these three points.
(1) Slice mehlig kochend potatoes into rounds of the same thickness.
= don't use waxy potatoes.
(2) Dry boiled potatoes well to weigh them exactly 200g while they are still hot. =Don't rinse them under cold water or weigh potatoes wet)
(3) Don't knead potatoes with flour.
=Kneading will form gluten and the gnocchi will be too firm in texture.

Ingredients for 2 main servings
Preparation for boiling potato
200g sliced potatoes (Not waxy potatoes)
Water (1) for boiling potatoes
5g salt +500g water
Preparation for boiling Gnocchi
5g salt +500g water
Ingredients for Gnocchi
200g sliced potato (boiled and mushed)
80g wheat flour type 405
2g salt( to mix with flour )
10g rapeseed oil with lemon flavor or olive oil for frying
For topping
10g olive oil ,pepper ,salt to taste.
250g vegetables of your choice
(Zucchini, cherry tomatoes ,edamame ,red onion
Red bell pepper ,mushrooms ,garlic and rosemary etc)

How to prepare vegetable toppings
Drizzle 10g of olive oil in a frying pan with a small amount of rosemary.
Remove the rosemary and Sauté vegetables for about 5minutes.
Sprinkle some pepper, salt and set aside.



How to make gnocchi
Step 1
Add sliced potato in 1% salty water (500g water/5g salt).
Set the timer for 15minutes.
Cook potatoes for 15minutes until fork tender.

Step 2
Drain the boiled potatoes well.
Weigh them exactly 200g while they are still hot.

Step 3
Add 80g of wheat flour with 2g salt and stir it well.
Transfer 200g of boiled potatoes into it.
Mash it with a fork only vertically.


Step 4
When the whole mixture is moistened, make it into one big ball.
You can knead it just enough to make it one big ball shape.

STEP 5
Divide into four equal parts.
You can knead this just enough to make small ball shapes.
(Start boiling another 500g water with 5g salt for the next step )

STEP 6
Slice them into a candy size pieces.
If you cut them into 2cm size it will be at least 2.5cm after being boiled.

STEP 7
Boil them in a hot water with 1% salt for about 2 minutes.
Gnocchi is done, you could serve boiled gnocchi with tomato sauce.
Or scope up and fry them.( see the next step)

STEP 8
Heat up 10g of heat stable oil in a frying pan.

STEP 9
Fry freshly boiled gnocchi both sides until golden. (it takes about 5minutes)


Serve fried gnocchi with vegetables:)
