Harissa paste bulgur pilaf

Ingredients (for about 3 servings) 1 cup of rinsed and strained bulgur ( No need to soak) 2 cups vegetable stock (or 2 cups water + 1 tablespoon vegetable stock) 2 tbsp tomato paste 1 cup chopped red bellpepper 1/2 cup chopped onion 2 tsp harissa paste 1 tbsp brewer's yeast 1 tbsp olive oil 1 tbsp chopped garlic + a pinch of black pepper and salt + 1/2 cup chopped parsley +1tbsp lime juice

(I personally like to use a pot instead of a frying pan to cook this dish)

Sauté chopped onions with olive oil ,add aromatic vegetables and spices. Add the bulgur and mix with the sauteed ingredients. Then add vegetable stock and bring it to a boil. Cover it ,let it simmer for 10 minutes then turn the heat off. Let it steam for 5 minutes wit hout a lid.

Unlike rice, blugur can be cooked really fast. When the water is absorbed and the blugur looks fluffy like rice, it is ready. I added a lot of chopped parsely and some lime juice before serving it.

This dish can be served warm but if it’s chilled in the fridge, that’s also tasty.
