less starchy stir fried potatoes

Ingredietns for 2 big portions
500g not starchy potatoes (peeled and thinly sliced)
100g red bell pepper
A hand full green onion
Seasonings
1tsp raw cane sugar
0.5tsp salt
1tbsp nutritional yeast
1tsp vegan hoi sin sauce
1tbsp soy sauce (light )
1tbsp balsamic vinegar
1tbsp roasted sesame oil
2 peperoni
5-10ml heat stable oil
Some Szechuan peppercorn
Topping
Coriander
Roasted bok choi
Shredded carrots
Sliced tofu
Chopped romaine lettuce
STEP 1
Soak thinly sliced potatoes in a bowl of water to remove starch.

STEP2
Add a pinch of salt in a boiling water.
Boil the potatoes from Step1 for 25 seconds, then rinse them under cold water.


STEP 3
Mix all the seasoning ingredients in a bowl.

STEP 4
Chop some bell pepper and green onions, and some chili if you would like.

STEP 5
In a big bowl, mix cooled potatoes,the seasoning from the Step3 and the
veggies from the step4.

STEP6
Toast some Szechuan peppercorn in a frying pan and heat about 10ml oil
( peanut oil).

STEP7
On a high heat stir fry seasoned potatoes for 4-5mins.

STEP8
Then the potatoes are cooked, it’s done.
Serve it with fresh salad ,roasted bok choi and some tofu etc.
