Mango Salad

Ingredients for 650ml size meal prep box



200g mango

50g carrots

50g cucumber

50g red bell pepper

5g salt (to process the carrot slices )

25g olive oil

25g pineapple juice

1tsp dijon mustard

A pinch of black pepper

1/3 tsp red curry paste(Thai curry )

Fresh herbs of your choice



STEP 1

Remove seeds from the cucumber, peel carrot.

Slice both into thin strips.

Sprinkle salt and let it sit for about 10minutes.

After 10minutes, squeeze out the water from both cucumber and carrots.

(No need to rinse them)

STEP 2

Carefully cut mango into thin strips.

Set aside.

STEP 3

Make a dressing for this salad just by mixing ingredients below.

25g olive oil

25g pineapple juice

1tsp dijon mustard

A pinch of black pepper

1/3 tsp red curry paste


We are going to use this dressing to marinate the salad.

STEP 4

Marinate the salad.

Cover it and rest it in the fridge for 30 minutes.

Don't skip this step because this salad tastes much better when you marinate it long enough.( you could marinate it over night too)

STEP 5

Sprinkle fresh mint and basil leaves just before serving the salad.

And it's done:)

I served this salad as a side dish of my vegan duck:)
