Minesterone with Miso Meal prep WS March 2025

Minestrone soup for 3 main dish /or 6 side dish servings (about 650ml x 3)


(Ingredients list A)

20g EV olive oil

In total of 200g finely chopped vegetables

(white onion, carrot ,celeriac ,garlic etc)


(Ingredients list B)

250g fresh tomatoes(diced)

7g salt 

1/2 tsp cumin powder

1/2 tsp dried oregano


(Ingredients list C)

In total of 400g diced vegetables

(zucchini,bell pepper,celeriac etc)


(Ingredients list D)

500ml water

70g tomato paste


(Ingredients list E)

25g Miso (shiromiso=white miso)


(Ingredients list F)

1tbsp brewer's yeast

about 240g cooked ,lightly salted kidney beans from one 400ml can (rinsed)


(For boiling pasta )

This is an optional ingredients

100g dry Gnocchetti/penne or any short pasta

500ml water

1tsp salt


Topping

Some chopped parsley or pesto

Black pepper to taste




STEP 1

Sauté all the ingredients from the list A for 5mins or until fragrant.


STEP2

Add freshly diced tomato and salt.


STEP3

Add all the ingredients from the list C for and Sauté vegetables for another couple of minutes.


STEP 4

Add all the ingredients from the list D, let it simmer for 15minutes.

Then add all the ingredients from the list E.

After adding miso paste keep the heat low.


STEP 5

In a separate pot boil short pasta (100g) for 10minutes or until al dente .

Drain water.



STEP 6

Add boiled pasta, rinsed beans and brewer's yeast into the soup.

Let it simmer for just a couple of minutes.

Sprinkle some black pepper and parsley.
