Multigrain rice (workshop side dish ) 11.03.2023

Hi there,
So I did not explain how I cooked this multigrain rice during today’s workshop.
Here is the detailed recipe and it’s easy.
Ingredients (in totall 600g)
500g short grain rice (Milch rice is also great)
20g quinoa
20g millet
20g amaranth
40g black rice
Mix all grains together and rinse well with water.
Drain the water.
Add 125% of the grain weight water (750 ml water /600g grain in this case) and steam in a pressure cooker for 25 minutes.
If you don't have a pressure cooker, you can use an ordinary pot, but
It is easier if you soak the grains in water for 30 minutes before cooking.
For a normal pot, the amount of water should be twice the weight of the grain.

When the grain is washed, it's this white.
When cooked, it is purple.
The polyphenols in black rice give it a purple colour.
In this workshop we had many more iron rich food such as tofu,beets,romaine lettuce.
And we have talked a bit about foods that increase iron absorption such as
Vitamin C,organic acids and beta-carotin and some allium vegetables include garlic, onion, leeks.
