My No-Knead Quick Panini (sandwiches)

This recipe is one of my " What I eat in the day " type of routine menu.
It's almost the same bread as my No-knead focaccia but this one is done in a few hours. (Not overnight)
You can start the dough in the morning around 10am and can already make delicious panini around noon without making your hand messy.
It's not made with the healthiest ingredients for a bread but you can fill it with a lot of fresh vegetables and spread bean paste or grilled tofu to make it a good balanced meal.
Ingredients for a sheet of focaccia
I use this most amazing baking tray from EDEKA.
It's a perfect size for 500g dough.
Ingredients for 6 big panini or 8 smaller panini
(For the dough)
500g wheat flour (405)
10g salt
5g sugar
7g dry yeast
400g water (30℃)
1-2 tsp whole cumin seeds
(Ingredients to add later )
Some rosemary leaves
10ml olive oil for the bottom layer
2tbsp olive oil for the top layer
Extra 10ml olive oil for brushing after baking process.
STEP 1
(This process takes less than 5 minutes. )
Add all the ingredients for the dough in a pot.
Mix it very well with "a handle of a wet wooden spoon".
If you use a chopstick it might break because the dough gets really sticky in the pot.
STEP 2
Place a lid and leave it where it's comfortably warm (Not directly on top of heater)
Let it ferment for 1hour until it doubles in volume.
400g water is not too much here; it speeds up this work.
STEP 3
Place a baking sheet on a tray.
Brush 10ml olive oil evenly.
Wet your hands so the dough will not stick to your hands.
Pour in the dough from step 2.
The dough is really soft and bubbly but no worries.
STEP4
Gently spread the dough to fill the baking tray with your wet hands.
Brush about 2 tbsp of olive oil.

STEP5
Let it rise for 35 minutes.
(After the first 20minutes start pre-heating oven to 250℃)
Place some rosemary leaves just before baking.
STEP 6
Bake it at 200℃ for 25minutes.
My oven is not very hot so it usually takes 25 minutes.
If you use a gas oven it should be quicker.

STEP 7
Drizzle some more olive oil optionally.
The crispy surface becomes soft as soon as it's brushed with some oil.
( or even with some water)

STEP 8
The bread is done:)
Sliced the bread into the desired size when it cools down a bit.
I sliced it into 6 portions for this recipe.
It's quite big.


For the filling I added some vegan salami, hummus, radish sprouts, cucumber slices, green salad and some mustard.
